How do we create manual timed trial after receiving a mail from interested person. Also in the application, how do we detect whether trial is active - so that we can limit certain features.

Just follow that. If you want to set the trial length to 0 to force customers to contact you (why though?) you certainly can. Then you can give them a trial extension. Also covered in the article.
